Chestnut Mushrooms are the richest, darkest mushrooms we grow.  They make the best stock, gravy, sauce and soup.  The stems can take a bit more cooking than the caps, but they are super easy to prepare, using a bowl and pair of scissors to snip the caps into one bowl, then the stems into another.  Start sauteeing the stems just a few minutes for adding the caps.  I love Chestnut mushrooms!

Chestnuts, aka, Cinnamon Caps, are one of our newest growing successes. They are not in the oyster family and take over a month just in the fruiting stage alone. This makes there availability much more rare at the farm, and harvest times are hard to anticipate.
